Lentil-Based Chocolate Mousse From Herman Desserts Joins Vegan Dessert Line-Up at SIAL Paris

Belgian dessert manufacturer Herman Desserts will present a plant-based chocolate mousse made with lentil protein at SIAL Paris, which runs from October 17 to 21 at Paris Nord Villepinte. Several other exhibitors are also bringing vegan sweet products for retail and foodservice buyers.

A coconut-free base

Herman Desserts developed the mousse after reviewing the existing vegan dessert category, where the company found most products relied on coconut. “While coconut can be a flavorful alternative, its distinctive taste means that it appeals to a rather specific target audience,” the company told vegconomist.

The recipe uses a lentil protein preparation combined with a blend of flaxseed fibre and pea protein. According to Herman Desserts, the product carries V-Label certification and can be marketed as lactose-free. For private label customers, the company can also produce the mousse free from allergens, including the soy usually present in standard chocolate. Herman Desserts says the mousse is stocked by the major retailers in the Benelux, where chocolate mousse is a staple of the chilled dessert aisle.

Vegan pastry for foodservice

Dottignies-based Food N’Joy, also from Belgium, supplies a vegan and gluten-free range to pastry chefs, caterers and restaurants. The range covers sweet verrines, plated desserts and piping bags filled with mousse for professional kitchens. Food N’Joy’s customers include foodservice distributors, event caterers, and airline and cruise operators.

Marzipan snacks and chocolate spreads

German confectionery and fruit preparation group Zentis, based in Aachen, is listing its Vegan Balls, which launched at ISM in 2024. The coated almond snacks come in two varieties: Popcorn, with caramelized popcorn pieces, and Brownie, which pairs marzipan with cocoa nibs under a dark chocolate coating.

Dutch family-owned spread producer Brinkers Food is also exhibiting. The company makes organic, Fairtrade and palm oil-free vegan chocolate spreads under its So Vegan So Fine and La Vida Vegan brands, and presented new flavors of both at SIAL in 2022.
