Serbian Stuffed Peppers with Mushrooms & Rice

Share

Stuffed peppers are a much-loved comfort food across the Balkans and Central Europe, and while meat-filled versions are probably the best known, there’s plenty to love about a good vegetarian filling. In this traditional Serbian recipe, sweet red bell peppers are stuffed with rice, finely chopped mushrooms, and onions, then slowly simmered in a simple tomato sauce. As they cook, the rice absorbs the savory juices and the peppers become wonderfully tender. It’s an inexpensive, satisfying meal made with everyday ingredients, and you certainly won’t miss the meat.

The recipe comes from Chef Djordjo Cetkovic, who represented Serbia in many international culinary competitions and is currently Executive Chef of Pano Kato in Singapore. It draws inspiration from the culinary traditions of Hilandar, a Serbian Orthodox monastery on Mount Athos in Greece. As Djordjo puts it, “From my Hilandar-inspired Lenten table: no meat, dairy or eggs, only mushrooms, rice and patience, because the fasting table can be generous too.”

Traditionally, such meatless dishes are enjoyed during Orthodox fasting periods, but there’s no reason to save them for Lent. These peppers make a delicious meal at any time of year, especially with a little crusty bread to mop up the tomato sauce.

Servings 4 servings

  • 800 g small red bell peppers (about 8 peppers)
  • 180 g uncooked white rice
  • 350 g mushroom , finely chopped
  • 180 g onion , finely chopped
  • 35 g olive oil
  • 350 g tomato passata (strained tomatoes)
  • 5 g salt
  • 1 g ground black pepper
  • 500 ml water
  • Prepare the peppers: Cut off the tops of the red bell peppers and remove the seeds and membranes, keeping the tops to use as lids. Finely chop the onion and mushrooms, and rinse the uncooked rice.

  • Make the filling: Heat the olive oil in a large skillet over medium heat. Add the onion and cook for about 8 minutes, until softened. Add the mushrooms and continue cooking, stirring occasionally, until they release their moisture and most of the liquid has evaporated. Stir in the uncooked rice, half the salt, and the black pepper.

  • Stuff the peppers: Spoon the mushroom and rice mixture into the peppers, filling each about three-quarters full to leave room for the rice to expand (this is very important!). Replace the pepper tops loosely and arrange the peppers upright in a deep, heavy-bottomed pot, packing them snugly enough to prevent them from tipping over.

  • Add the tomato sauce: Mix the tomato passata with the water and remaining salt. Pour the mixture around the stuffed peppers. The liquid should come partway up their sides.

  • Simmer: Bring the liquid to a gentle simmer, then reduce the heat, cover, and cook for approximately 50–60 minutes. Check occasionally and add a little hot water if the sauce reduces too much

  • Check and serve: Test the rice inside one pepper to make sure it’s completely tender. Continue cooking for a few more minutes if necessary. Remove the pot from the heat and let the peppers rest for 10 minutes before serving, allowing two peppers per person with some of the tomato sauce.
