New on the Menu: Three seafood dishes and a pork chop

There is a surprising amount of sesame in this week’s column. Black sesame garnishes the lobster roll at Houndstooth in Benton Harbor, Michigan, which is seasoned with lemongrass and served alongside grilled pineapple. It is also the finishing touch of the scallop handroll at Norifish in Atlanta, which has an unusual condiment of butter mixed with salted plum. Black sesame is made into a powder that’s dusted on a cocktail inspired by New York City’s famous black & white cookie and served at The View in Times Square.
Regular sesame seeds are in the mole that accompanies the pork chop at the new Millie Leigh’s in Midland Texas, and they also garnish the plate.
The only item without sesame is the new tuna tartare at Ecco in Atlanta, which is accompanied by a creamy sauce made with padrón peppers and served with pickled banana peppers and sliced green tomatoes.
