New on the menu: Potato skins and pot pie

You might be too young to remember potato skins, but they were all the rage in the 1980s — baked potatoes with most of the flesh scooped out and the skins loaded with typical potato fixin’s. Well, a version of them is back at Ember & Vine in Coral Springs, Florida, where Nicholas Cox is serving them with a house-made onion dip and the very 2026 option of adding caviar.

Pot pie never went away, but it is being given a Philippine treatment at Sunda New Asian, where Mike Morales makes a variation of kaldereta stew and tops it with a pastry cap and the very 2026 addition of bone marrow.

At Kaiya Omakase, a new counter at Lido House in Newport Beach, California, Sushi Chef Brian Kim makes a sort of corn tofu inspired by Joshua Tree National Park as part of the very 2026 tasting menu.

Also all the rage this year is milk punch, and a variation of it made with cream cheese and inspired by blueberry cheesecake can be had at Night on Earth in Los Angeles at a throwback price.

Beets with creamy cheese are a timeless combination, and they’re accompanied by pine nut brittle at Piccolo Morini in New York City.
