How Dirty Do You Like It? Your Soda, That Is.

One of my favorite places to visit is my local sandwich shop. Not just because it has a huge selection of made to order sammys, everything from smoked brisket grilled cheese to classic hotdogs, but also for its locally made craft sodas. While old-fashioned soda shops, as our grandparents knew them, may be long gone, a newer version of “fancy sodas” is popping up everywhere, especially in candy and sweet shops. So, how realistic is it to add this to your current establishment, and what in the world is a “dirty soda”?

Today’s quick-service restaurants, sandwich shops, and food trucks are evolving beyond just savory fare to become curated “sweet and savory” stops, maximizing sales by offering specialty beverages that perfectly complement the main course. Not to mention, it’s a great way to bring in customers who might just be looking for a refreshing beverage on a hot day instead of lunch. 

The question is: how can you introduce high-margin specialty sips, from cold-blended coffees to boba and creative sodas, without sinking capital into a full build-out or hiring new staff? The answer lies in strategic sourcing, partnerships, and leveraging the power of pop-up experiences.

Adding specialty drinks is not just about a product; it’s about creating a profitable, fun experience that increases your average ticket size.

  • The Perfect Pairing: Consumers are highly receptive to cross-merchandising. Promote drink specials as the ideal complement to your core products. For example, pair a refreshing, bright Dirty Soda with your smokiest pulled pork sandwich, or a tangy, fizzy creation alongside loaded fries or a hearty grilled cheese. This makes the drink an essential part of the meal experience, not just an afterthought.
  • Harness FOMO with LTOs: Launching beverages as Limited-Time Offers (LTOs) or seasonal flavors, such as a summery “Tropical Pineapple Coconut” or “Caramel Apple Soda” for fall, creates a sense of urgency. This encourages spontaneous purchases and attracts new customers. Use a short introductory discount to generate initial buzz, and of course, share it all over your social media to draw in the masses.

If adding a permanent drink bar is too capital-intensive for your sandwich shop or food truck, here are low-overhead alternatives that allow you to test the market and generate excitement:

  • Partner for Premade Power: Instead of installing new equipment or training a team of mixologists, establish a partnership with a local specialty beverage company. Offer their best-selling bottled craft sodas, unique lemonades, or signature iced teas. This allows you to serve a premium, high-quality product without the labor and equipment costs of in-house production.
  • The Pop-Up Experience: A pop-up setup lets you test a new concept with low risk and high reward. Hosting a themed “Fancy Soda Friday” once a month next to your truck or inside your shop taps into the limited-time nature that customers love, building anticipation and drawing a crowd ready for an immersive experience.
  • Soda Machine Retrofit: If you already have a traditional soda fountain, consider expanding your syrup offerings to include specialty flavors (like coconut, vanilla, or fruity purees) and a premium cream base to create customizable “dirty sodas” with minimal new equipment. Alternatively, bring back the soda machines, but fill them with locally made pre-bottled sodas and cans. Oftentimes, the makers of these sodas will provide the cold case or soda machine if you are willing to sell their goods. It never hurts to ask if this can be an option.

These are indulgent, sippable treats; think of them as a classic soda shop float, perfected.

  • The Original Dirty Soda (Classic Coconut-Lime): A simple but unbeatable blend of cola, infused with sweet coconut syrup and a bright squeeze of fresh lime juice, topped with half-and-half. This combination is fizzy, creamy, and just barely tropical; it tastes like sipping a perfect, icy cola at the beach.
  • Dirty Dr Pepper: A popular variation that marries Dr Pepper’s 23 unique flavors with coconut syrup, lime, and heavy cream.
  • The Orange Creamsicle Dream: A nostalgic favorite, combining Orange Fanta or soda with rich vanilla syrup and a splash of cream. It captures the bright, creamy taste of a melted creamsicle ice cream bar.
  • Strawberry Vanilla Delight: A sweet and nostalgic blend of Sprite, strawberry syrup, and vanilla creamer, like a drinkable strawberry shortcake.

Well, there you have it. If you are looking for something to jazz up your sandwich shop or food truck offerings and boost your average ticket size without major capital investment, consider offering either premade fancy sodas or adding a pop-up bar.
