These Creamy Street Corn Chicken Tacos are stuffed with a cheesy rotisserie chicken and street corn filling, baked until golden and crispy, and finished with crumbled feta, fresh cilantro, and a tangy sour cream dip on the side. Ready in under 30 minutes and the kind of taco that makes you wonder why you ever bothered with the regular kind.

If you’ve never had Mexican street corn, also known as elote, it’s essentially grilled corn slathered in a creamy chili lime sauce and finished with cheese, cilantro, and enough lime juice to make you very happy. It’s one of those flavor combinations that’s so good it needed to be put inside other things, and tacos seemed like the obvious next step.

These tacos take everything that makes street corn irresistible, the creamy base, the corn, the chili lime finish, the cheese, and combine it with shredded rotisserie chicken in a filling that gets packed into flour tortillas and baked until golden and crispy. The whole thing takes under 30 minutes and the rotisserie chicken shortcut means most of that time is spent doing absolutely nothing strenuous.

  • Rotisserie chicken is the shortcut that makes this a genuine weeknight recipe. No cooking the chicken, no seasoning the chicken, no standing over a pan. Just shred it and stir it into the filling. Done.

Grilled corn on the cob gets slathered in a creamy sauce made with mayo or sour cream, rolled in cotija cheese, dusted with chili powder, and finished with a squeeze of lime. It’s messy, it’s indulgent, and it’s absolutely worth it.

This recipe takes all those flavors and turns them into a taco filling. The corn, the creamy base, the chili lime seasoning, the salty cheese finish.   • Rotisserie chicken (2 cups, shredded): The whole reason this recipe’s done in under 30 minutes. Grab one from the store on the way home and shred it while you gather everything else. Already cooked, already seasoned, just shred and go.
  • Corn (1 cup, canned or frozen): Canned works, frozen works. If you’re using canned drain it well. If you’re using frozen thaw and pat dry. You want the corn as dry as possible so the filling doesn’t get watery.
  • Cream cheese (4 ounces, softened): The creamy backbone of the filling. Softened so it stirs in smoothly without lumps.
  • Sour cream: Goes into both the filling and the dip. Adds tang and creaminess.
  • Mexican cheese blend and mozzarella: The combination gives you flavor from the Mexican blend and stretch from the mozzarella. Both matter.
  • Taco seasoning, garlic powder, and chili powder: The spice layer. Store bought taco seasoning‘s completely fine here and is part of what makes this recipe so fast.
  • Lime juice: Fresh squeezed. Goes into the filling and the dip and it’s a non negotiable part of the street corn flavor profile.
  • Canned diced green chiles (4 ounces, drained): Adds mild heat and a subtle smokiness to the filling. Don’t skip them.
  • Flour tortillas (12 small): Flour holds up better than corn for baking. They crisp up nicely without cracking.
  • Oil for brushing: Brushed on the outside of the tortillas before baking to help them get golden and crispy.
  • Crumbled feta: The finishing cheese that goes on after baking. Cotija’s more traditional but feta’s easier to find and works beautifully.
  • Fresh cilantro: For finishing. Skip it if cilantro’s your nemesis.
  • Hot sauce: For the dip. As much or as little as you like.

Preheat the oven to 400°F and lightly grease a 9 by 13 inch baking dish.

Stir together the shredded chicken, corn, cream cheese, sour cream, Mexican cheese blend, mozzarella, taco seasoning, garlic powder, chili powder, lime juice, and green chiles in a large bowl until creamy and well combined. Taste it. It’s good. Try not to eat it all before it gets into the tacos.

Brush one side of each tortilla lightly with oil. Flip them oiled side down, spoon about 3 tablespoons of filling onto each one, and fold into a half moon. Pack them upright and snugly in the baking dish so they hold their shape during baking.

Bake for 10 to 12 minutes until golden, crispy, and the cheese pulls when you tear one open. While they bake, whisk together the sour cream, lime juice, taco seasoning, and hot sauce for the dip.

  • Dry or drain the corn thoroughly. Whether you’re using canned or frozen, extra moisture in the filling will make the tacos soggy. Drain well and pat dry before adding.
  • Soften the cream cheese properly. Cold cream cheese won’t stir in smoothly and you’ll end up with lumps in the filling. Room temperature is what you want.
  • Pack the tacos snugly. They need to stand upright in the dish and the snugger they are the better they hold their shape during baking.
  • Don’t overbake. 10 to 12 minutes at 400°F is enough. Too long and the tortillas go from crispy to hard and the filling dries out.
  • Don’t skip the finishing touches. The feta, cilantro, and chili lime finish is what makes these street corn tacos rather than just cheesy chicken tacos. It’s the last 30 seconds of effort that makes all the difference.

  • Different protein: Swap the rotisserie chicken for Pork Carnitas for a richer more indulgent version. The filling works beautifully with carnitas and it’s an excellent way to use up leftovers.
  • Make it spicier: Add a diced jalapeño to the filling or use hot green chiles instead of mild. More hot sauce in the dip never hurt anyone either.
  • Make it vegetarian: Skip the chicken and double the corn. Add a drained can of black beans for protein and bulk. Still creamy, still delicious, no chicken required.
  • Different cheese finish: Cotija’s the traditional street corn cheese and if you can find it use it. The saltiness is slightly different from feta but equally excellent.

For the tacos

  • 2 cups rotisserie chicken (shredded )
  • 1 cup canned or frozen corn (drained and patted dry)
  • 4 ounces cream cheese (softened)
  • 5 tablespoons sour cream
  • 1 cup Mexican cheese blend (shredded )
  • ½ cup mozzarella (shredded )
  • 1½ tablespoons taco seasoning
  • ½ teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 lime (juiced)
  • 4 ounces canned diced green chiles (drained)
  • 12 flour tortillas
  • 2 tablespoons oil (for brushing)

For finishing

  • Crumbled feta cheese
  • Fresh cilantro (chopped)

For the dip

  • Preheat your oven to 400°F (200°C) and lightly grease a 9 by 13 inch baking dish.

  • In a large bowl, stir together the 2 cups shredded chicken, 1 cup corn, 4 ounces cream cheese, 5 tablespoons sour cream, ½ cup Mexican cheese, ½ cup mozzarella, 1½ tablespoons taco seasoning, ½ teaspoon garlic powder, 1 teaspoon chili powder, the juice of 1 lime, and the 4 ounces green chiles until creamy and well combined.
