August is National Peach Month and we’re celebrating their sweet and juicy goodness all month long with these sweet and savory recipes. 

As any peach aficionado will tell you, the absolute best way to eat a ripe peach is to devour it fresh and whole (skin included) while standing over the sink with the juices running down your chin and forearms. It’s messy, sticky-sweet and simply fabulous. And it’s also the ritualistic way we like to begin our preparation for each and every one of our favorite peach recipes—it is a cook’s prerogative, after all. 

But with so many peaches to be had, whether it’s from the farmers market or from a bountiful tree in the backyard, we always end up with more than we can eat at the sink. Luckily for us, sweet peaches have an affinity for pairing themselves with all kinds of dishes, sweet or savory.

From breakfast to appetizers, dinner, dessert and a drink, these recipes capture everything we love about sweet, juicy and sunny summer peaches. A dessert layered with peachy goodness: a loaf pan is first layered with a three-ingredient peach sorbet, followed by a layer of vanilla ice cream, a layer of peach purée filling, another layer of ice cream, then finished off with another layer of peach sorbet. Olive oil cakes pair exceptionally with fruits and two of our favorite summer iterations make the most of peak peach season. Peach Bundtlette Cakes with Salted Caramel Sauce

We’re shortcake fanatics. You can measure the passing of summer by the shortcakes we make—and summer starts with then-peak strawberry shortcakes and ends with high-to-late-summer-peaking peaches. While it’s true that every season has its bounty, there truly is no season like summer for sweet fruits. Luckily, we can preserve the harvest to extend the season. Slice and dice those peaches for the freezer. And make these liqueurs, shrubs, pickles, jams and preserves to further your enjoyment.

Homemade Peach Noyau

There’s a nutty secret hidden in stone fruits so save them as you make the recipes on this list. Noyaux (singular is noyau) is the French word for the kernels that are found within the pits of the stone fruits like peaches and apricots. While they shouldn’t be consumed on their own, they have a distinctive almond-like flavor and you can use them to make your own amaretto at home. All you need is brandy, applejack or bourbon and 60 noyaux to make your own liqueur at home. Four months later, you can enjoy it in this classic Godfather cocktail.

Peach Habanero Shrub

Shrubs are one of the easiest preservation methods. They require few ingredients and can be stored in the refrigerator for up to one year. They can be used as a refreshing concentrate to mix with still or sparkling water, or in cocktails (and mocktails).
