Organic Zhejiang Green Tea and Lychee Mousse, White Chocolate, Matcha Financier

Mix egg yolk with the sugar. Add the milk and green tea and cook as a custard.
Add melted gelatin, mix gently with the whipped cream.
Fill round molds.
Combine the Lychee puree with sugar and agar, heat to the boil,put adside and add the gelatine.
Stir well and put all the mix in a GN tray.
