Magnus Nilsson Cooks 5-Month Aged Ribeye

PBS have released another great clip The Mind of a Chef episode with the Swedish chef Magnus Nilsson.[1][2]

We’ve already brought a large part of the episode [3]where Nilsson takes the crew through some of the hardcore preparation he must go through to stock up on ingredients during Sweden’s harsh winters.

In the latest clip the chef goes Umami mad with a dish that’s created specifically to show off a wonderful piece of aged beef.

The ribeye, aged for five months, is served with sugar kelp which is dipped in a thickened stock, alongside Nilsson’s ‘tasty paste’ - something he describes as pure umami - a sprinkling of mushroom powder, a kelp reduction and a healthy chunk of butter.

Enjoy but be warned, you’ll surely be craving meat after seeing it.

Pear Smoothie Without Yogurt

Pear Smoothie Without Yogurt

Put the pears into a pan and cover with 600ml water.

Bring to the boil and simmer for 5 minutes to soften the fruit.

Turn off the heat and leave for 10 minutes.

Pour the pears and juice into a blender and whiz together until the mixture is completely smooth.

Pour the pear juice through a sieve into a jug.

Squeeze the oranges and mix the orange juice with the runny honey and pear juice.

Pour into a bottle or carton and chill for 30 minutes.

Shake to serve.
